Twice Baked Sweet Potatoes - Thanksgiving Menu

We roast the sweet potatoes until they’re soft, then the insides are scooped out and mixed with swiss & gruyere cheese, fresh thyme, butter and caramelized onions. The stuffing mixture is dropped back into the potato skins and baked until they’re perfectly done and caramelized on top.
