“Unstuffed” Pepper Rice Bowl
Enjoy all of the flavors of stuffed peppers, without the prep time or long bake time.
Ingredients
1 cup white or brown rice
2 tablespoons olive oil, divided
1 pound turkey or chicken sausage, removed from casing if necessary
1 shallot, minced
2-4 cloves garlic, minced
3 red, yellow or orange peppers, diced
1 can white beans, drained and rinsed
1/2 cup pesto, divided
1/4 parmesan cheese
Fresh cracked pepper (to taste)
Salt (to taste)
Juice of 1 lemon (optional)
Directions
Prepare rice according to package instructions.
Place a large frying pan over medium heat. Add 1 tablespoon of olive oil to heated pan. Add sausage to the pan to brown. Break up the sausage into small pieces with a spoon. Once cooked, remove from pan and set aside.
Add the other tablespoon to the pan. Add shallots and garlic and sauté until shallots are translucent. Add peppers to the pan and sauté for 5 minutes, stirring occasionally. Add white beans to the pan. Season with salt and pepper.
Add the turkey sausage and the rice to the pan and stir to combine.
If you’re using the lemon juice, add and stir into the mixture.
Add 1/3 cup of the pesto to the pan and stir to combine. Reserve the rest of the pesto for serving.
Spoon mixture into a bowl, top with pesto and parmesan cheese and enjoy!
